Yes. When in the course view on Canvas you can select "Usage Statistics" from the left column. This will take you to a screen which displays each item along with how many times it has been used. Underneath the "Usage" column you will see a number indicating how many times the item has been opened. Select "Show Detailed Usage" to display the Name, Date and Usage count of students who accessed the material as well as the names of students who have not.
